Kung Pao Cauliflower

Kung Pao which means to “stir-fry” is a favourite Chinese dish as it presents a combination of sweet, salty, sour, spicy flavours that will make you want more. It’s popular for chicken, pork and seafood, but also great for vegetables! Perfect for vegans and weight-watchers.

This dish adds a Pinoy twist to the recipe. You can use this for any vegetable in season. It will give you the succulence and crunch of veggies, and a taste that will make you say, “Wow, Kung Pao!” 

Prep Time: 15 minutes
Cook time: 15 minutes
Serves 3-5
Spice Blend Used: Sweet Salty Spicy

Ingredients:

  • 1 tablespoon Reqado Sweet Salty Spicy
  • 2 tablespoons vegetable oil
  • 1 sayote, chopped in small wedges
  • 3 medium-sized heads cauliflower, cut into small pieces
  • 1 red bell pepper, chopped in wedges
  • 1 green bell pepper, chopped in wedges
  • 1 medium sized carrots, chopped in wedges
  • 2 cloves garlic chopped
  • 1 small onion chopped


Kung Pao Sauce:

  • 1/3 cup soy sauce, more if needed
  • 2 tablespoons cane vinegar
  • 2 1/2 tablespoons honey, more if needed
  • 1 tablespoon grated ginger 
  • 2 tablespoons cold water
  • 1 1/2 tablespoons cornstarch 

Garnish:
1 teaspoon sesame oil to drizzle
Chopped parsley, toasted sesame seeds, or peeled peanuts (optional)

Cooking Steps:
1. In a wok or pan, warm oil over medium to high heat.
2. Sweat the onions, and then add garlic until the edges turn to light brown.
3. Add in the Reqado Sweet Salty Spicy blend and stir for 12-15 seconds.
4. Add the carrots and sayote and stir-fry for 2-3 minutes over high heat.
5. Mix in the cauliflower and stir-fry for another 3 minutes. Cover the pan and turn down the heat. Let it simmer for 1 minute.
6. In a small cup, mix all of the ingredients for the Kung Pao Sauce. Make sure the cornstarch is properly dissolved.
7. Add in the Kung Pao sauce and mix until the veggies are coated and the sauce thickens.
8. Add in the bell-pepper and stir-fry for another 30 seconds.
9. Finish off by drizzling with sesame oil. Turn off the heat to avoid overcooking the vegetables.
10. Mix in toasted sesame seeds and peanuts. This is optional. The nuts and seeds will add an extra crunch to the dish.
